Cheesy Ranch Chicken - Instant Pot
My kids practically love anything with ranch or cheese in it, and chickit's en is a hit or miss. Like almost anything, my oldest will try it, and typically like it, my youngest will fight anything new until he's exhausted, then he sits and eats 3 bites but says he doesn't like it just to spite us, even if he really does. Then he goes to bed without eating dinner. It's his jive. I mean, how else do you get a 4 1/2 year old that's a whopping 35lb? (Oh, that 35 lbs is with boots, coat, hat, gloves and 3 full sized rolls of quarters in his pocket). I know this, because you have to be 35lbs to jump at the local trampoline place, and that's how we got him in - yes, there's a scale there to weigh the kids.
But I digress - here we are - Cheesy ranch chicken. It's an easy 7 ingredient recipe (because I wouldn't dream of adding onions to something my youngest might actually try). Well, Ares liked it, Adam and I loved it, Atlas didn't even get his plate off of the counter to sit in front of it. It was a rough afternoon for all of us, it was a day that I checked out of parenting because I wanted to keep the kids alive, and if I would have tried to get anything done, then I would have probably come close to killing them.
Sauté everything BUT the cheese for 10 minutes on high until the chicken is cooked (but still tender)
Add the cheese, put the lid back on the pot and continue to Sauté for 5 minutes. (OK, the recipe says to keep on sauté for 5 minutes once the cheese is on.... but I did that, and the cheese burned to the bottom of the pot, as in, soaking-with-Dawn-for-13-hours-and-still-can't-get-the-crap-off-ruining-the instant-pot-burned. So maybe just put the cheese in and put the lid on but turn OFF the sauté function.

- 2lbs Chicken Tenders (cut into bite sized pieces)
- 6 oz hidden valley ranch mix
- 1 package (8oz) of cheese (mixed works well)
1 small onion chopped finelyOh, yeah right, not with my kid- 1/4 tsp garlic powder
- 4oz butter (we typically use margarine)
- 1 Cup of 2% milk (but we drink skim, so I change it up)
- 1/4 tsp of Salt
